Every commission begins with listening: the occasion, the guests, the room, the pace you imagine. Nothing is proposed until this is understood.

A menu is written for your table alone — around the season, the region’s larder, and the people sitting down. It will not be cooked twice.

The sourcing
Day boats, named farms, walled gardens where the setting allows. Produce chosen close to the table it will reach.

The evening
Samuel arrives hours ahead, cooks in your kitchen, and serves with dedicated front-of-house support. The pace belongs to the table.

The disappearance
The kitchen is returned exactly as it was found — often cleaner. What remains is the evening itself.
