A tasting menu is an argument about the season. Eight or so courses, each making a single point, none overstaying its welcome.

The commission
Samuel’s tasting menus are written weeks ahead and finished days before — late enough for the market to have the final say. Hand-dived scallops when the boats have been out; asparagus in its short window; game when the calendar allows.
Courses are small, exact and unhurried. Wine pairings can be arranged around your own cellar or sourced to match.
